Ajoblanco with Dried Broad Beans

INGREDIENTS:

  • 1/5 kg dried broad beans.
  • Bread.
  • 4 or 5 cloves of garlic.
  • Olive oil.
  • Water.
  • Salt.
  • Vinegar.

PREPARATION:

The dried broad beans are soaked in water the night before so that, once softened, the skin can be easily removed.

When tender, crush them with salt and garlic; gradually add olive oil and gently mix everything until a fine and consistent mass is obtained (the more it is crushed, the better).

Water is added to the white paste obtained.

Season with salt and vinegar.

Serve cold and eat it alone, with crumbled bread, apples, or green beans.
