Asparagus “mojete” (2 people)

Ingredients:

  • Wild asparagus (300 grams)
  • 2 cloves of garlic
  • 1 egg per person
  • Extra virgin olive oil
  • 1 dash of vinegar
  • Coloring
  • Salt to taste
  • Breadcrumbs
  • 2 bay leaves

 

Preparation: Chop the garlic cloves and fry them in oil. Once fried, add and fry the previously chopped asparagus. Add a drizzle of vinegar and, once it has been absorbed, cover with water, add the two bay leaves and salt to taste. When it comes to a boil, add the eggs and poach them. Then remove them and add the food coloring and, little by little, the amount of breadcrumbs needed depending on whether you want them to be more or less thick. Once done, add the previously poached eggs and serve.
